A simple side, perfect for a summer day, or even for Thanksgiving. Very refreshing!! Meant to serve a big group! My friends always keep coming back for more!! Ingredients

    3 or 4 small Hass avocados (calories calculated using 3 avocados)
    1 lemon
    1 can of yellow sweet corn
    Rosemary
    Parsley
    a pinch of salt if desired

Directions

Cut each avocado in half and remove the pits. Take a knife and score the avocado 1 centimeter rows going vertically and horizontally (this does not have to be measured). Do not cut through the skin. Then take a spoon and scoop the avocado (basically cubed) and place into a bowl.
Add the corn. Squeeze the lemon (either half or whole, depending on your palate), over the avocado and corn. Add spices and mix.

Serve right away.

Serves at least 8 people as a side dish.
