Very delicious and so easy! I serve it with mini croissants for showers, brunches and picnics, It is always a big hit and is requested by my friends and family often. It can be made even lower in calories by substituted the mayo with Greek style yogurt and dijon mustard. Very delicious and so easy! Ingredients

    4 cups cubed (1/2 inch) cooked chicken (about 1 3/4 pound)
    1 cup walnuts,toasted and chopped
    1 celery rib, cut into 1/4-inch-thick slices (1 cup)
    2 tablespoons finely chopped shallot
    1 cup pineapple tidbits
    3/4 cup mayonnaise
    3 tablespoons tarragon vinegar
    2 tablespoons finely chopped fresh tarragon
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    Serves 4

Directions

Cook chicken breasts in desired fashion, I like to grill the breasts, but it works very well if poached in water or white wine.

Toss together all ingredients in a large bowl until combined well.
