Ingredients

2 canned of NO SALT diced tomatoes, (2 - 28 oz tins)
1 can of tomato paste
1 yellow pepper, large, chopped
2 zucchini, about 3 - 4 cups, cut into bite sized pieces
1 large or 2 medium onions, about 1.5 - 2 cups, chopped
3 cloves garlic
2/3 cup pitted black olives
1/2 - 1 tsp oregano, dried
1/2 tsp basil, dried
1/4 tsp thyme, dried
fresh ground black pepper to taste
Directions
Makes about 8 servings of 1 cup each.
In a large sauce pan, combine all ingredients. Place on medium low heat and bring to a bubble. Turn the heat down to low and cook for an additional hour, until flavours have a chance to...co-mingle.
Serve over pasta.

Thanks! I used to fry my veggies in a little olive oil, but then I thought, "Why not make it a no fat added recipe by just chucking it all together without the oil? Why bother frying anything?" And it tastes just as good. For me the olives really give it body. Thanks again!!
