Ingredients

    1 c sugar
    2/3 c oil
    3 eggs
    1 1/2 tsp vanilla
    2 1/2 c whole wheat flour
    3 tsp baking powder
    1 tsp salt
    1 c 1% milk
    1 c packed brown sugar
    1/2 c butter
    6 slices pineapple

Directions

Preheat oven to 350 degrees. Put butter and brown sugar in a 12" cast iron skillet. Heat to melt. Meanwhile, cream sugar and oil. Add eggs and vanilla, mixing well. Sift together dry ingredients. Add to creamed mixture alternately with milk.
Place pineapple slices on top of melted butter and brown sugar. Pour batter over top and bake in preheated oven for 40-45 minutes, until toothpick inserted comes out clean.
Immediately cover with a large serving plate and flip. Cut and serve while warm.
