This is a casserole that is delicious! This is a casserole that is delicious!
Number of Servings: 8


    3 cups white rice
    8 chicken thighs
    1 can low-fat cream of mushroom
    1 can cream of mushroom
    1.5 cups shreaded parmesan cheese
    1 can cooked carrots


Cook 3 cups of rice according to package directions. Mix rice, carrots, and cream of mushroom soup. Salt and Pepper to taste. Lay rice mixture in large baking pan. Lay 8 chicken thighs equally spaced across the top of dish. Cover with shreaded cheese. Bake 350 degrees about 45 minutes or until chicken is done.
