Introduction

Excellent for Quesadillas or use instead of taco meat in a taco. Excellent for Quesadillas or use instead of taco meat in a taco.

Ingredients

    1 Tbsp canola oil
    1 med. onion, chopped
    1 med. green pepper, chopped
    3 stalks celery, chopped
    4 cups water
    1 cup dried green/brown lentils
    11/2 cups cooked brown rice
    1 can tomato paste
    2 tsp. chili powder
    1/2 cup Pepper Jack cheese, grated

Directions

In large saucepan, saute green peppers, onion, & celery in oil for about 5 min.
Add water & lentils and bring to a boil. Cover, reduce heat & simmer for 40 minutes. Do not drain.
In a lightly oiled, medium sized casserole dish combine the remaining ingredients, except the cheese. Bake uncovered for 25 minutes at 350 F.
Sprinkle with cheese and bake until cheese is melted.
Serves 6
