Number of Servings: 12

Ingredients

    1 16 oz. bag frozen tortellini
    8 c. chicken broth (or use bullion cubes with 8 c. water)
    2 cloves garlic
    1 T. butter
    1 box frozen spinach
    1 can stewed tomatoes
    1 T. dried basil (or 3 T. fresh)
    1/2 c. grated parmesan cheese
    2 tsp. salt


Directions

In a stock pot, saute butter and garlic until just golden brown, add chicken stock, salt, basil and bring to a boil. Add tortellini; cook for 4-5 min. then add the frozen spinach and stewed tomatoes (this stops the tortellini from becoming too soft). Turn off the stove. Stir in the parmesan cheese and let it sit for about 10 min. or until the spinach is hot. Serve immediately. Can be frozen or served again.
A sprinkle of grated parmesan over the top is a nice way to serve it.

    Delicious! I followed the recipe with a few changes.... I added 2 tablespoons sofrito and doubled the parmesean cheese. I made this last night, and it went so fast I am making another pot right now! - 9/18/11

    My kids love this soup. I have made several versions. I like to add spicy italian sausage to the onions browning. It adds a zing to the soup without extra seasonings. - 3/9/11

    This is a great recipe. I have made this several times using fresh tortellini, both the cheese filled and mushroom filled varieties. - 12/15/07
