Introduction

Fast, filling and super easy to do. These burritos make a supper spring to life in a matter of minutes. Pair this with Spanish rice, beans, lettuce, chopped tomatoes, salsa, light sour cream and (if you can spare the calories) some homemade guacamole and you have a meal that even a Los Dos Amigos would be proud of! (I use smaller tortillas than what is in this recipe to cut down on calories. It doesn't ruin the taste and it is still filling!) Fast, filling and super easy to do. Ingredients

    2 1/2 c. shredded chicken
    1 small can of diced green chilis
    1 c. Reduced Fat Mexican Cheese
    1/4 c. green onions, chopped
    1 tsp. Oregano, ground,
    1/2 tsp. ground Cumin Garlic,
    1 clove, minced
    1 can no fat Traditional refried beans
    6 Mission Carb Balance Fajita size - 1 flour tortilla,

Directions

Combine chicken, cheese, onions, chilis, oregano, cumin, and garlic. Mix well. Spred 1/4 c. refried beans down the center in a line. Add 2/3 c. chicken mixture. Fold bottom and top of tortilla in and wrap sides in to make a burrito. Spray with cooking spray and broil for 7-9 minutes until crispy and golden brown on top.

    Very Good
    This was a really great recipe. I added green peppers and onions which was good. My husband liked it. Had it two night in a row for dinner!! In one batch I also substitued black beans for the refried beans. Thanks for sharing the recipe. - 5/7/09
