Ingredients

    4 portabella mushroom caps, stems removed
    1 cup Ricotta cheese, part skim
    1 cups spinich, chopped
    2 cloved garlic, chopped
    1 cup marinara sauce
    4 tbsp parmesan cheese

Directions

Drizzle olive oil in baking dish.
Place mushroom caps in baking dish and bake for 20 minutes at 450 until tender.
Mix together ricotta cheese, 2 tbsp parmesan cheese, chopped spinich, garlic
When mushrooms are tender, empty any liquid into baking dish.
Warm marinara sauce in microwave and place 1 tbsp in each mushroom cap. Keep remaining sauce warm. Fill each mushroom with ricotta and spinich filling. Bake 10-12 minutes. Top with remaining marinara sauce and parmesan cheese.
