Ingredients

    1.75 cups low fat Ricotta
    21 Jumbo Shells
    1 onion, diced
    3 gloves garlic, chopped
    16 oz package frozen spinach, thawed and drained well
    0.5 Tbsp Nutmeg
    1 Tbsp Oregano
    1 Tbsp Basil
    1 Tbsp Salt
    0.5 Tbsp Pepper
    1 Egg
    2 cups shredded part skim mozzarella
    1.5 cups tomato sauce

Directions

Saute onion and garlic, and mix with spinach. Beat egg and combine with ricotta, spices, half of the mozzarella, and spinach mixture. Stuff shells with mixture and place in 9x13 pan. Pour tomato sauce on top. Bake 25 minutes at 350F, and sprinkle remaining mozzarella on top. Broil an additional 5 minutes to melt and brown cheese. Serving size is 3 shells.
