Introduction

I used chicken thighs because I prefer them but this could easily be made with boneless, skinless breasts as well. I would recommend cubing the breasts, however, and cooking them on low for 6-8 hours rather than high for 3-4. Ingredients

    1/2 cup tomato sauce
    One medium yellow onion, chopped
    1 tsp curry powder
    1 tsp turmeric
    1 tsp cumin
    3 boneless skinless chicken thighs
    Approx. 1/4 cup water

Directions

Pour the tomato sauce into the slow cooker and add the spices. Chop the onion and add to the cooker, being sure to mix well. You may choose to brown the chicken first, or add it directly to the slow cooker. Stir again once you have added the chicken, being sure to coat it thoroughly with the sauce and onions. Add the water to thin the sauce if desired.

Cover and cook on high for 3-4 hours, or on low for 6-8 hours.

Top with cilantro, if desired. Goes well over brown rice.

    I used marinara sauce, and had to leave out onion & tumeric since I didn't have any). Very tasty! - 3/1/10
