Ingredients

1 1/2 cups salsa
1 jalapeno pepper, seeded and chopped
2 - 15 oz. cans black beans, rinsed and drained
1 - 8.5 oz. package corn muffin mix
1 Tbsp. chili powder
2 Tbsp. Olive oil
1/2 cup sour cream, reduced fat or fat free
1/2 tsp. chili powder
Directions
Drain the salsa, rinse and drain the black beans.
Chop the japaleno.
In large bowl, mash black beans with fork.
Stir in muffin mix, drained salsa, 2 1/2 teaspoons of chili powder and chopped jalapeno.
Heat olive oil in large skillet over medium heat. add five mounds of bean mixture to skillet and flatten with a spatula. Cook 3 minutes on each side until browned. Remove from skillet.
In bowl, combine sour cream and 1/2 teaspoon chili powder. Top cakes with salsa and sour cream, if desired.
Makes 5.
