Ingredients

    12 " Baquette
    Red Bell pepper ( sliced ) 1/4 cup
    Green Bell pepper ( sliced) 1/4 cup
    1/2 cup cherry tomatoes
    Broccoli ( chopped) 1/2 cup
    Califlower ( chopped) 1/4 cup
    Mushroom ( sliced) 1 cup
    Red onion ( sliced) 1/2 cup
    Mozzarella Cheese ( Shredded) 1/4 cup
    minced garlic 2 tsp

Directions

Makes 3 - 4" Sandwiches

Slice your mushrooms, onion, red bell pepper, green bell pepper.

Chop your broccoli and cauliflower.

Then in a large saucepan add your mushrooms, onion, red bell pepper, green bell pepper, broccoli, cauliflower,garlic and tomatoes. Cook over low heat until vegetables are all cooked through.
NOTE: Make sure you stir the vegetable's occasionally.

Once vegetable's are all cooked through spread vegetable's evenly over the sliced opened baguette. Then top with the shredded mozzarella cheese and toast under grill until cheese is all melted.

add basil for extra flavor
