    1 1/4 lb. Boneless Chicken Breast
    1 tsp. oregano
    1/2 tsp. red pepper
    1/4 tsp. black pepper
    1/2 tsp. salt
    1 Tbsp. butter, unsalted
    1 whole green pepper, thinly sliced
    1 med. onion, thinly sliced
    1 C. mushrooms, sliced
    1/4 C. Shredded Mozzarella Cheese
    1/4 C. Shredded Cheddar Cheese


Mix oregano, red and black pepper and salt and sprinkle on both sides of chicken. Place chicken in non stick skillet and cook on medium until internal temp. reaches 165 degrees. Remove from pan and keep warm. Add to pan where chicken was cooked, butter, onion and green pepper. Cook until tender crisp, about 5 minutes. Add mushrooms and cook an additional 3 minutes. Place chicken back in pan and divide vegetables on top. Divide cheeses on top evenly, cover and remove from heat. Serves 4.

    I added tomatoes because I didn't have bell peppers, and I also added garlic and fresh parsley to the chicken rub. It was fantastic! My fiance approves, which is hard to do because he cooks most of the time. - 7/17/07
