Introduction

This is an adaptation from a recipe online - I doubled the veggies and halved the quinoa because I like it better this way. This is an adaptation from a recipe online - I doubled the veggies and halved the quinoa because I like it better this way.
Number of Servings: 4

Ingredients

    2 cups water
    1 cup raw whole grain quinoa
    .75 cucumber, sliced
    .5 red or yellow bell pepper, diced
    2 cup lightly steamed brocolli florets
    2 tomatoes, chopped
    1/8 cup olive oil
    1 lemon, juiced
    1 clove garlic, through press
    dash salt and pepper, to taste (sea salt tastes best)

Directions

Cook quinoa until it fluffs up, about 15 minutes, stirring occasionally.

While quinoa is cooking, whisk together lemon juice, olive oil, garlic clove, and salt and pepper.

When quinoa is finished cooking, allow to cool slightly then, toss with vegetables and lemon juice mix, stirring to combine well. Add more salt and pepper to taste, and chill before serving.

    Very Good
    Funny, I found this online today and thought I would see if there was a recipe that was fairly close and this is it! This was pretty tasty. I added green beans and corn and left out the broccoli. - 1/9/12
