Introduction

I love breakfast skillets, so I tried some substitutions at home! I love breakfast skillets, so I tried some substitutions at home!
Number of Servings: 1

Ingredients

    1 small potato, diced
    1 tablespoon low fat butter
    1/4 cup diced onions
    1/4 cup chopped pepper, bell
    3 egg whites
    1 slice fat free american cheese
    salt and pepper to taste

Directions

Melt butter in pan on low-mid heat. Add potatoes, onions, and pepper. Cover with lid and cook for about 10 minutes, or until potatoes and onions are soft, stirring occasionally. Add egg and stir. Add cheese. Turn off heat and cover with lid, the cheese will melt on it's own. Stir again before serving. Makes a very filling breakfast, easy on the calories and fat.

    I doubled the vegetables, added 1/2 cup of Egg Beaters and divided it into two 4" souffle dishes, topped each with a slice of FF cheese and covered one with plastic wrap for another day (or could be for two). I love potatoes, especially for breakfast. - 8/26/13

    Good receipe. I removed onions (allergic) and just added more bell peppers (for flavor) and tomatoes at the end when cheese added. Very Yummy.thanks - 2/27/11

    My husband and I really enjoyed this! And it was so easy to make too. I cut up the ingredients ahead of time and it saved time at the actual meal preparation. It's so gratifying to know you can have food that tastes as good as a restaurant, but without all the added fat and salt. - 4/23/10
