    2 tbs olive oil
    1/2 onion, thinly sliced
    1-1/2 tbs chopped garlic
    2 tbs lemon juice
    2 chicken breast halves, cubed (or turkey breasts)
    2 10z pkg spinach leaves
    12z penne, prepared
    1/2 cup roasted red peppers, sliced
    1/2 cup chicken broth


Heat oil on med-high heat. Add onion, garlic and lemon juice. Saute until onion softens. Sprinkle chicken with salt and pepper. Add to skillet and saute until just cooked through. Add spinach and toss until it begins to wilt. Mix in prepared pasta. Mix in red peppers. Add chicken broth. Toss. Season to taste.
