    1/2 boneless chicken breast
    1 Tblsp capers
    1 tsp olive oil
    1/4 cup chicken broth
    juice of 1/2 a lemon
    sprinkle of flour
    salt & pepper


Pound chicken thin, sprinkle with salt & pepper, dredge with flour. Heat olive oil in non-stick pan & cook chicken 5 minutes on a side or until done. Remove chicken from pan & keep warm. Add chicken broth & lemon to pan & reduce until syrupy. Add capers & pour over chicken.

    This was great. I laid it over orzo and peas, topped it with grilled sliced zucchini, with grilled asparagus on the side and a few roasted soy nuts atop. FABULOUS!! - 7/26/10
