    2/3 cup pureed avocado
    2 boiled eggs shredded
    1/4 tsp. salt
    1/4 tsp. lemon juice
    dash black pepper


Mix avocados with salt, pepper and lemon juice. Stir in the eggs. Makes about 4-1/4 cup servings.

  • I added a teaspoon of light mayo and had it on whole wheat with fresh spinach leaves and it was very good. Oh, and I only used one of the egg yolks and didn't miss the other at all. - 10/31/09
