Ingredients

1 cup plain dry oatmeal
3 tbsp flaxseed mill
1/3 cup whole wheat flour
1 tbsp brown sugar
2 tsp baking powder
1/2 tsp kosher salt
1 egg white
1 cup non-fat milk
Directions
*Place first 5 ingredients in food processor or blender. Blend until it's a flour consistency.
*Mix wet ingredients in separate bowl
*Mix both together being careful not to over mix or it will toughen the pancakes
*Let the batter rest for about 5 min , don't over manipulate it when you spoon it up to cook.
*Use medium heat . Spray skillet or griddle with cooking spray and wipe with paper towel, otherwise cooking spray will burn and pancakes will become greasy. 1/3 cup batter per pancake ,
cook 2-3 min on each side until bubbles form on top and begin to pop and edges begin to look dry.
Makes about 5 pancakes
