Ingredients

    1 package pork tenderloin (about a pound)
    1 large can (28 oz) whole or stewed tomatos
    1 large can (28 oz) diced tomatos drained
    1 can (15 oz) black beans
    1 can (15 oz) red kidney beans (you can use any type of canned bean you like to equal about 30 oz of beans)
    1 large onion chopped
    1 green pepper chopped
    cumin to taste (about 1-2 tsp)
    chili powder to taste (about 1-2 TBSP)
    cayenne pepper to taste (1 to 2 tsp)
    Salt

Directions

Roughly chop onion and green pepper. Toss into crock pot. Cut up pork tenderloin into about 1/2 inch cubes (cutting off any fatty parts you see). Add to crock-pot. Add the 2 cans of tomatos and beans to pot. Add about 1 tsp cumin and 1 TBSP Chili Powder. Set crock-pot for 8 hr on low. Taste after 8 hrs and adjust seasonings to taste. It can be kinda soupy, if you like it thicker you can substitute a can of refried beans for 1 of the can of beans, or you can cook it with the lid off for the last hour or so. Makes 8 large bowls about 2 cups each.
