Number of Servings: 8

Ingredients

    2 c. fat free chicken broth
    1 - 15 oz can white beans OR fat free refried beans (drained)
    1 - 15 oz can S&W black beans (drained)
    1 - 15 oz can S&W Stewed Mexican Recipe Tomatoes (barely drained)
    1 - 15 oz can medium pitted olives (drained)
    1.5 cups golden hominy
    1 - 7 oz can diced green chilies
    1 garlic clove, minced
    2 tbsp chili powder

Directions

Open all the cans. Drain the beans and olives, and drain a small amount of liquid off the tomatoes. Pour all the ingredients into a large saucepan. Mince the garlic and add the pot. Season to taste.

Makes 8 - 1 cup servings of about 153 calories each!

Lots of good, healthy nutrients but it is pretty high in sodium.

Goes particularly well with a bit of shredded cheddar cheese or a few avocado slices if you have a few more calories to spare for your meal.
