Turkey Meatloaf stuffed with Spinach and Feta Cheese Turkey Meatloaf stuffed with Spinach and Feta Cheese
Number of Servings: 8

Ingredients

    16 oz ground turkey
    1/4 cup sun-dried tomatoes (1 oz)
    1 10 oz package of chopped spinach, thawed
    1/2 chopped onion
    1/4 cup reduced fat feta cheese
    1 cup quick or old fashioned oats
    1 tsp garlic power
    1 tsp dried oregano
    1/2 cup skim milk
    cooking spray

Directions

Heat oven to 400 F. In medium skillet heat sundried tomatoes, spinach and chopped onion, heat till onions are tender, remove from heat and add feta cheese till well combined. Set aside.

Mix turkey, oats, garlic powder, oregano and milk till well combined. Spray loaf pan with cooking spray. Line pan with turkey mixture so there is large indentation. Fill indentation with spinach mixture then top with remaining turkey mixture so spinach mixture is encased in the turkey. Bake 30-35 minutes or until juice run clear. Let meatloaf stand 5 minutes before serving.

If spinach is not your style substitute any green vegetable of your choice (green beans, brocolli, aspargus).
