Introduction

Number of Servings: 6

Ingredients

    2 1/2 c grilled corn (3-4 ears)
    2 scalliions, chopped
    1 jalapeno pepper, seeded and minced
    1 avocado, diced
    1 c grape tomatoes (whole or halved)
    1/4 c Cilantro, chopped
    Lime zest from 1 lime
    Lime juice from 1 lime
    1 Tbsp Olive Oil
    1/4 tsp Kosher Salt
    Pepper to taste

Directions

Grill corn on cob until tender with grill marks. Let cool. Cut corn from cob. Mix with scallions, jalapeno, avocado, tomatoes, cilantro, and lime zest.
Whisk together the olive oil, lime juice, salt and pepper. Drizzle over corn mixture and mix well.
Chill.
Eat plain or serve over bed of salad greens.
Makes 6 1/2-c up servings.
