Introduction

This chicken is fabulous!! It can be used in so many ways! Breakfast, as part of a breakfast burrito, as part of a stuffed tomato, over some rice, in a tortilla....or just by itself, the way i prefer!

The tequila is optional, the alcohol cooks out, and the flavor is minimal. You can also spice it up by adding jalapenos if you like.

Ingredients

    4 chicken breasts (cut into thirds)
    4 cans rotel chicken, mexican flavor
    1 oz. Tequila (or 2 oz if desired)
    2 limes
    Fresh Cilantro (chopped to garnish)

    Optional Extras:
    Jalapenos (sliced or chopped)
    Fat Free Sour Cream

Directions

Pour 2 cans of rotel, juice and all into a large skillet.


Place chicken breasts over rotel, and top chicken with remaining 2 cans of rotel, juice and all.


Cook over medium heat, until chicken is just cooked through. 10 - 15 minutes


Remove chicken breasts, set aside to cool a bit.


Add juice of 1 lime to tomato mixture, cilantro, and salt to taste if desired. If you want it spicier, now is the time to add the jalapenos.


Using two forks, shred the chicken and add back into the mix. Chicken will soak up the juices. Let cook on medium for another 15 minutes.


Now you get to choose how you prefer to eat it? Just the way it is? With some egg whites, and a low carb tortilla as a breakfast burrito. Over rice. As a taco, as a burrito. Stuffed in a tomato. Maybe an enchilada with some green enchilada sauce.
