These yummy quesadillas are an interesting healthy twist to a dish we all love. These yummy quesadillas are an interesting healthy twist to a dish we all love.
Number of Servings: 32


    1 1/2 cups of Nonfat Cottage Cheese
    32 Corn Tortillas
    1 can of Spinach
    1/2 cup of Shredded Cheese


1. Open your can of spinach and pour it in a strainer to drain. (try to get all the liquid out so the quesadilla won't be too moist) and warm up your pan/ griddle

2. Mix together your cottage cheese, shredded cheese, and spinach together.

3. Warm the tortilla and then put about one table spoon of your mixture on the tortilla and spread it a round. Fold the quesadilla in half. Brown it to your liking and eat :)

This should make about 32 half quesadillas, or about 16 with 2 tortillas and 2 tbs each.
