Introduction

A wonderful curry soup for all seasons. I've been known to eat it cold on a hot summers day. This is soup is great for vegetarians, vegans, those that are df, corn free, soy free, gluten free, wheat free. A wonderful curry soup for all seasons. Ingredients

    1 Tbsp coconut oil
    1 large onion diced
    6 cloves garlic minced
    2 tbsp curry powder or to taste
    2.5 tsp cumin seeds
    Dash of hot pepper flakes (optional)
    6 cups of water
    1.5 cups red lentils rinsed and drained
    1 tsp salt
    1/2 cup cilantro to garnish (optional)

Directions

Heat coconut oil in a large stock pot add onions and garlic and saute for a few mintues. Add curry and cumin pepper flakes if using and cook until golden and fragrant. Add water and bring to a boil, add lentils, when water returns to a boil reduce to a simmer and cover lid loosely. Cook 15-20 minutes or until lentils are soft. Add salt when done and garnish with cilantro.

5-1.5 cup servings (leaves a little left over)
