Introduction

I was given a recipe for "Oklahoma Caviar." I added a cup of frozen corn to bring it home to Indiana (and changed the dressing to fat free!)

It's meant to be a salsa, eaten on tortilla chips, but I like it as a side dish. So yummy and good for you.

Ingredients

    1 Can black beans, rinsed and drained
    2 Cans black-eyed peas, rinsed and drained

    1 Red bell pepper
    1 Yellow bell pepper
    1 Red onion
    1 Jalapeno pepper
    1 Cup frozen corn, thawed



    1 Cup fat free Italian dressing

Directions

Drain and Rinse 2 cans of black eyed peas and one can of black beans.

Dice the next four ingredients (red bell pepper through jalapeno pepper)

Place all ingredients in large bowl and stir. Refrigerate to chill.
