Introduction

I just started experimenting one day, trying to come up with something filling yet healthy to eat. I was inspired by another SparkPeople recipe, but changed it up a bit. Number of Servings: 1

Ingredients

    1/2 c. (dry) pasta of choice
    1 small cucumber (or about 1/2 of a regular cucumber) chopped or sliced, with skin
    about 4 grape tomatoes cut into fourths
    1 1/2 oz. baby carrots sliced
    about a 4" strip of celery, cut
    1 Tbsp. Olive Oil (for sauteing)
    Garlic, dried onion (or fresh if preferred), dill, basil, ground mustard, salt, and pepper to desired taste.
    2-3 tsp. Grated Parmesan Cheese

Directions

Cook pasta according to package directions, until Al Dente; drain. Heat oil to medium heat in small fry pan; add vegetables and spices, sauteing until tender. Add to pasta, and top with Parmesan cheese. enjoy! Makes 1 serving.
