Introduction

I like to use a healthy mix and then add more nutritional value with applesauce and flax (sometimes I add wheat germ also). The chocolate chips iare not a bad tade off to make this recipe VERY kid friendly- my 3 boys love them !!! Ingredients

    *4 C Trader Joes Multigrain baking and pancake mix
    *4 eggs
    *2 C unsweetened applesauce
    *1 1/4 C plain soy milk (regular milk is fine- my son is lactose intolerant)
    *2 tbsp ground flax
    *2/3 C mini chocolate chips

Directions

Preheat electric griddle to 350. Mix all the ingredients. Adjust the milk to suit your preference- more milk for thinner pancakes, less for thicker. Ladle mix onto griddle. When bubbles form on the edges, flip over and remove from griddle after 1-2 minutes. Makes 22 4 inch pancakes (75 grams each). Enjoy with pure maple syrup. I enjoy putting 1 tbsp of natural peanut butter on one pancake and top with sliced banana- yum!
