Introduction

Ingredients

    1 T. olive oil
    1 small sweet onion, diced
    2 cloves garlic, chopped fine
    3 med. carrots, sliced thin
    1 large potato, diced
    1/4 of a large head of cabbage, chopped
    2 c. diced canned ham (or sandwich ham)
    1 T. dried parsley (or fresh - 3 T.)
    1/4 t. ground thyme (or fresh sprigs)
    1 bay leaf (remove before serving)
    1 can white beans, rinsed
    1 can fat free vegetable broth
    7 c. water
    1 t. salt
    sprinkle of herbal season-all, to taste
    cracked pepper to taste





Directions

Heat oil in a large pot over medium heat, and add onion, garlic, carrots, potato, cabbage, and ham. Saute until onion is translucent. Stir in herbs, salt, beans, veg. broth and water. Cook over low heat 1 hour (or longer, if you prefer vegetables very soft).

Recipe makes approx. 12 cups of soup; nutrition info. is based on 1 cup of soup (1/12 of recipe). The purple-ish bits in the photo are the potato. I used a dark purple potato to add some color!
