Introduction

This simple omelet takes just a few minutes to make. Very good and filling. This simple omelet takes just a few minutes to make. Very good and filling.
Number of Servings: 1

Ingredients

    1 whole egg
    2 egg whites
    8 grape tomatoes cut up in quarters
    2 tbsp mozzarella shredded cheese
    a dash of water to the mix
    and non fat spray for the pan

Directions

Spray a non stick pan with no fat spray, set the heat pretty high.
Slightly beat the eggs together with a fork and add a little cold water to the mix. Then pour it in the heated pan.
Lightly lift the edges with a spatula so that the loose mix will run enderneath to harden. When the omelet slides around the pan, then turn it over with a spatula.
Add the tomatoes, cheese and spices to that side, then turn it over in half. It is done and ready to eat.
I usually serve this omelet with a slice of whole wheat toast and 1/2 tsp suger free preserves.
