Ingredients

    1 (5.25 oz) Can Whole Green Chilies, drained
    Cooking Spray
    1 Pound Ground Turkey Breast
    1 Cup Onion, Chopped
    2 teaspoons Chili Powder
    1/2 teaspoon Cumin
    2 Cloves Garlic, minced
    1 (10 oz) can Diced Tomatoes w/ Green Chilies
    2 Cups Frozen Corn
    1 (16 oz) Fat Free Refried Beans
    1 1/2 Cup (6 oz) Cheddar Cheese, shreaded
    1 Cup Chopped Tomatoe
    1/2 Cup Chopped Green Onion, opitional

Directions

Preheat oven to 375 degrees.
Spray baking pan with cooking spray.
Cut green chilies in half lengthwise. Arrange in a single layer in an 8" square baking pan.
Cook turkey in medium skillet, throughly. Add next 4 ingredients and saute' 5 minutes. Add tomatoes and cook 5 minutes or until liquid evaporates.
Spoon mixtured over chilies. Top with corn, spread refried beans over corn. Sprinkle with the cheese. Bake for 30 minutes.
Sprinkle the top with tomatoe & onion.
Serves 6

    I warmed up the beans and they were a little easier to spread, I just put them in the pan that the turkey came out of. - 3/11/10
