Introduction

This came out great but the quantities are based on whatever vegetables we had in the fridge. You may have more, less or different veggies to add. The most important items are the seasonings: soy sauce, white wine, orange juice, and roasted garlic. We also used olive oil to saute all the veggies.

Ingredients

    3 ears of corn, kernels cut off
    1 small can of water chestnuts
    1 bunch asparagus cut into 1" pieces
    10 baby carrots, shredded
    1/2 head cauliflower
    1 8-oz package, portabella mushrooms, thinly sliced
    1 onion, thinly sliced
    1 red, yellow & orange bell peppers, thinly sliced
    1 bunch of broccoli, cut into pieces and stems skinned
    2 ribs of celery, cut into 1/2" pieces
    2 cups snap peas, halved
    3 tbsp Roasted garlic
    1/2 of a squeezed orange juice
    2 oz white wine
    3 tbsp soy sauce (use lite for less sodium)
    3 tbsp olive oil
    16 oz lobster or crab chunks
    12 oz shrimp, tail removed

Directions

Saute all vegetables in olive oil until al dente. Start with corn as that takes the longest to soften. Add seasonings. Once veggies are al dente add seafood. Cook 5-7 min on med heat. If using raw shrimp cook until done.

Makes 6 2-cup servings.

    Incredible!
    I love vegetables and this is full of them. I didn't use any oil -just offered sesame oil to drizzel. I did add a Chesapeake Bay seasoning made by Penzey's -a spice company I like. Added some fresh herbs too. Nice change from sweet sauces. It lets the vegetables and seafood shine through. - 5/2/16

    To give it a more Asian taste, I would use Sesame Oil instead of Olive Oil and sprinkle toasted Sesame Seeds just before serving. I have done something very similar...and used store-bought rotisserie chicken...and it was really wonderful. - 10/2/10
