We threw together some of the stuff that we had left so we did not have to think about what to cook for the night. NOTE: We had small skewers so the serving size might change (one skewer = one serving). Ingredients

    FOR THE MARINADE:
    1 Tbsp Basil
    1 Tbsp Lemon Pepper
    1.5 tsp Garlic Powder
    1/2 Tbsp Orange Peel
    1/4 Cup Balsamic Vinegar
    1/8 Cup Rice Vinegar
    1/8 Cup Cider Vinegar
    1 Tbsp Olive Oil

    For the Kabob:
    14 oz Chicken Breast (No Bone)
    8 oz Scallops
    3 oz Portabella Mushrooms
    1 (6oz) Bell Pepper
    2 oz Red Onion

Directions

1 - Place all the ingredients for the marinade into a bowl and mix.

2 - Cut up the Chicken, Mushrooms, Pepper, and Onion into 1 inch squares

3 - Kabab them (Chicken, Mushrooms, Pepper, Scallops, and Onions) on skewers (if wooden skewers - remember to soak them in water before Kababbing).

4 - Place Kabobs on grill and lightly baste every time you turn them.

5 - Kaabobs should be done right as the marinade runs out.
