Introduction

Ingredients

1 head of cabbage, sliced (like for cole slaw)
2 tbs. olive oil
2 carrots, sliced or shredded
1 large pepper, chopped
2 medium tomatoes or 1 small can of diced tomatoes
salt, pepper to taste
Optional: pork, sausage, or a smoked ham
Directions
Cut the large head of cabbage as for a cole slaw, slice the carrots or shred them, dice the pepper and tomatoes.
In a heavy bottom pan, heat some olive oil and then saute the carrots and peppers for 2 minutes. Then add the cabage and continue to cook for 5 minutes (you'll notice the cabbage shrinking). Then add the tomatoes, salt and pepper, stir, and then cook, covered, until the cabbage is fully cooked (for another 15-20 minutes or so). If too much liquid is present, you can also broil on low, uncovered, for 5-7 minutes until it browns a bit.
Optional: cook the meat (chopped) first until golden brown, then saute the vegetables. It's also very tasty by adding a sprig of thyme.
