A great light dish with a zing! A great light dish with a zing!
Number of Servings: 4

Ingredients

    * *Healthy Harvest Pasta, Rotini, 8 oz
    * Olive Oil, 1 tbsp
    * Zucchini, 2 cup, sliced
    * Mushrooms, fresh, .5 cup, pieces or slices
    * Onions, raw, .5 medium (2-1/2" dia)
    * Green Peppers (bell peppers), 0.3 cup, chopped
    * Garlic, 3 tsp
    * Shrimp, cooked, 8 oz
    * Stewed Tomatoes, 2 cup
    *Oregano, 1 TBS
    *Crushed red pepper, to taste
    * Parmesan Cheese, grated, 3 tbsp

Directions

Cook Pasta according to directions on package. Meanwhile, cook onions, gr. pepper, mushrooms, zucchini and garlic until tender. Add tomatoes, Oregano, red pepper and shrimp and heat through. Put over pasta and top with parmesan. Makes 4 servings.

    Deeeelicious!! Loved every bite. I forgot to put the cheese on top, and put a little too much red pepper- but it was awesome either way! Will definitely make again - thank you! - 8/18/09
