Introduction
An apple a day keeps the doctor away...and whole grain flours, yogurt, and flaxseed can't hurt either!I chose low fat yogurt as opposed to fat free to make some of the fat soluble vitamins more digestible. Fat free works perfectly well though. An apple a day keeps the doctor away...and whole grain flours, yogurt, and flaxseed can't hurt either!

Ingredients
-
3/4 cup whole wheat pastry flour
1/4 cup rice flour
1/4 cup spelt flour
1/4 cup graham flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. kosher or sea salt
1/2 cup unsweetened applesauce
1/2 cup low fat plain yogurt
1 egg white
1 tbsp. flaxseed meal mixed with 3 tbsp. water
1/2 tsp. vanilla extract
1 medium apple, roughly diced and treated to prevent browning (toss with a squeeze of lemon juice)
Optional topping: 2 tbsp. rolled oats mixed with 1 tsp. honey and 1/2 oz. of finely chopped mixed nuts.
Directions
Pre-heat oven to 350 degrees F.
Combine the flours, baking powder, baking soda, salt, and cinnamon in a large bowl and set aside.
In a separate bowl, whisk together the egg white, applesauce, yogurt, flax/water mixture, and vanilla extract until thoroughly combined.
Gently fold the wet ingredients into the dry until just combined and then stir in the apples.
Bake in a greased loaf pan for 40-45 minutes or until the top of the bread springs back when poked gently with a finger.
