Introduction

An apple a day keeps the doctor away...and whole grain flours, yogurt, and flaxseed can't hurt either!

I chose low fat yogurt as opposed to fat free to make some of the fat soluble vitamins more digestible. Fat free works perfectly well though.

Ingredients

    3/4 cup whole wheat pastry flour
    1/4 cup rice flour
    1/4 cup spelt flour
    1/4 cup graham flour
    2 tsp. baking powder
    1 tsp. cinnamon
    1/2 tsp. baking soda
    1/4 tsp. kosher or sea salt
    1/2 cup unsweetened applesauce
    1/2 cup low fat plain yogurt
    1 egg white
    1 tbsp. flaxseed meal mixed with 3 tbsp. water
    1/2 tsp. vanilla extract
    1 medium apple, roughly diced and treated to prevent browning (toss with a squeeze of lemon juice)

    Optional topping: 2 tbsp. rolled oats mixed with 1 tsp. honey and 1/2 oz. of finely chopped mixed nuts.

Directions

Pre-heat oven to 350 degrees F.

Combine the flours, baking powder, baking soda, salt, and cinnamon in a large bowl and set aside.

In a separate bowl, whisk together the egg white, applesauce, yogurt, flax/water mixture, and vanilla extract until thoroughly combined.

Gently fold the wet ingredients into the dry until just combined and then stir in the apples.

Bake in a greased loaf pan for 40-45 minutes or until the top of the bread springs back when poked gently with a finger.

Makes 8 generous slices.
