Ingredients

    1 Tablespoon Smart Balance Light Buttery Spread
    1 cup chopped sweet yellow onion
    2 cups sliced portabella mushrooms
    1 cup long grain white rice
    2 cups tap water

Directions

Heat buttery spread in a large, heavy saucepan just until melted. Add onions, mushrooms and rice and stir well. Heat over medium to high heat until mushrooms start to soften and rice begins to brown, stirring constantly to prevent sticking - about 5 to 7 minutes. Pour in water, stir once, and lower heat to a simmer. Cover and simmer for 20 minutes without lifting the lid. Remove from heat, remove lid and fluff with a fork.

    Delicious. The calorie count shown is about 83 calories low! One cup DRY rice is 699 calories; .17 cup = 118 CALORIES, NOT 35. (There are 35 calories in .17 cup of COOKED rice.) I added 83 calories of cooked rice to my tracker to account for the error. - 2/15/13
