Ingredients

4 Portabella mushroom stemmed, gills removed
2 tabs.olive oil
1 (5oz) can tuna in water
1 Celery finely chopped
1/2c Flat parsley
2Tabs. fresh lemon juice
4 deli sliced thin Swiss Cheese
4 slice tomatoes
1/2c mixed baby greens
Directions
Preheat broiler. Brush mushrooms with olive oil, than place in the oven turning once until softened and cooked through,around 10 minutes.
In a bowl combine tuna, celery, parsley, lemon juice, and remaining oil. Salt and pepper to taste.mushrooms, divide tuna mixture among mushrooms and spread evenly. Top with swiss cheese place back in to broiler to melt cheese.
Than top each mushroom with a tomato and 2 tablespoons green and serve immediately.
Serves 2.
