Ingredients

    CRUMB COATING

    2 tbsp panko breadcrumbs
    1 tbsp grated parmesan cheese
    1 tbsp cornmeal
    1/4 tsp groung oregano
    1/4 tsp cayenne

    1 egg white
    2 sole fillets (85 grams each)

Directions

Preheat oven to 450 degrees. Spray a broiler pan with non-stick spray. Combine all CRUMB COATING ingredients into a shallow dish. Dip the fillets into egg white then into the crumb mixture. Place on broiler pan.
Bake for 10-12 minutes

    Loved how simple this recipe was. Turned out delicious! Added some dried onion flakes to the dry mix. Easy and fast a keeper for sure. Served with homemade vegetable fried rice. - 1/31/15
