Ingredients

    6 large field or white mushrooms
    1 lb Ground Chuck
    1 large egg (or 2 egg whites)
    1/4 - 1/2 medium Bell Pepper (color, your choice), chopped finely
    1/4 - 1/2 medium Sweet Onion, chopped finely
    2 tsp Minced Garlic or 2-3 cloves Garlic
    1/4 tsp Poultry Seasoning or Sage
    1/4 tsp ground Oregano
    1/4 tsp crushed Basil Leaves
    1/2 tsp Garlic Salt
    White pepper, to taste
    1/4 cup grated Parmesan Cheese
    PAM or other light cooking spray
    1/4 cup Mozzarella cheese

Directions

Preheat oven to 400°F.

Remove the stems from the mushrooms and chop them finely (by hand or in a food processor); set aside.
(Mince the garlic, if using fresh cloves.)
In a mixing bowl, combine the beef, egg, garlic and vegetables (except the mushroom caps and stems), mixing with your hands until well blended.
Add all the spices; mix well by hand.
Add the chopped mushroom stems and Parmesan Cheese; mix well, again.
Place the stuffed mushroom caps onto a baking pan or sheet sprayed with cooking spray (PAM). Mound the stuffing mixture into the mushroom caps, both pressing it into the crevice under the rim of the cap and making a rounded top.
Place the pan i a 400 degree (preheated) oven for about 20 minutes.
Sprinkle the tops of each stuffed mushroom with equal portions of the Mozzarella Cheese and return to the oven for about 5 minutes or until the cheese topping has melted.
