Number of Servings: 8

Ingredients

    16 oz extra lean ground beef
    small egg
    1 cup chopped fresh onion
    1 cup rolled quick oats (dry)
    8 tbsp ketchup
    4 tsp yellow mustard
    2 oz marbled cheddar cheese (cubed into 8 tiny cubes)

Directions

Preheat oven to 375.
In medium mixing bowl, add all ingredients EXCEPT for cheese. Mix well.
Drop beef mixture by spoonfuls into 6 ungreased, unlined muffin tins.
Place 1 small cube of cheese into center of each mini-meatloaf. Press down.
Bake in oven for 30 minutes.

    Incredible!
    I used breadcrumbs instead of oats, left out the mustard and added some worcestershire sauce, and used very little shredded cheese in only half the meat muffins. I also used only egg white, so used 2. Delicious. Even my kids loved them!! - 1/8/12
