Ingredients

1 Package BABY Spinach
2 Hardboiled Eggs
1/3 Red Onion, coarsely chopped
2 Cloves Garlic, minced
4 Slices Thin Center Cut Bacon, cooked and crumbled
2T. Reserved Bacon Fat
2T. Organic Cider Vinegar
1/4t. Agave
Fresh Ground Black Pepper TT
1T. Toasted Pine Nuts
Directions
In glass bowl, whisk together:
2T. Organic Cider Vinegar
1/4t. Agave
Fresh Ground Black Pepper TT
In Microwave, cook
4 slices center cut thin bacon
Once cooked, reserve 2T. bacon fat and discard any remaining fat
Crumble Bacon
Toast P
Chop 2 hardboiled eggs.
Chop 1/3 Red onion
Mince 2 Cloves Garlic
Set baby spinach in salad serving bowl.
In fry pan, add 2T. reserved bacon fat and heat.
Add the onion and saute for 4 minutes.
Reduce heat to low, then
Add the minced garlic, cook for 30 seconds, turn off the heat.
Add vinegar, agave, pepper mixture to pan and blend into the onion/garlic.
Pour over baby spinach and toss well.
Add chopped egg and bacon bits, toss.
Top with 1T. Toasted Pine Nuts
Add additional Fresh Ground Pepper TT
Enjoy.
