Ingredients

    1 cup Tony's Roux Mix
    2 cups water
    1 onion
    1 lb. chicken (deboned)
    1 large can tomato sauce
    1 can Rotel tomatoes
    1 can diced tomatoes
    Garlic
    Tony's Creole seasoning
    parsley
    Salt

Directions

Mix Roux mix and water. Heat until has pudding consistency. Add tomato sauce, rotels, and diced tomato. Add water to thin to desired thickness. Season to taste. Add onion and chicken. Allow chicken to cook in gravy mixture. If not already cut up, remove cooked chicken and shred or cut. Serve over rice. Makes approximately 12 servings, depending on the amount of water used.
