High fibre, low-fat, with a bit of chocolate! Great to grab and run in the morning. Feel free to reduce or leave out chocolate, or substitute with raisins, dried cranberries, or other fruit or nuts. Ingredients

    1/2 cup Brown Sugar, packed
    Oat Bran, 1.5 cup
    Flour, whole grain, 1.5 cup
    Baking Powder, 2 tsp
    Baking Soda, 2 tsp
    Salt, .5 tsp
    Cinnamon, ground, 1 tsp
    Egg, fresh, 2 large
    Applesauce, unsweetened, 1.5 cup
    Canola Oil, 2 tbsp
    Semisweet chocolate, 1 cup chips (6 oz package)
    Vanilla Extract, 1 tsp

Directions

Mix brown sugar, eggs, applesauce, oil, and vanilla in a large bowl, set aside. Mix oat bran, flour, baking powder and soda, salt, cinnamon, and chocolate chips in a small bowl, stir to combine. Fold dry ingredients into wet ingredients. Line muffin tin with 12 paper liners, divide batter evenly. Let sit for 10 minutes. Bake at 400 degrees for 15 minutes, rotating pan 180 degrees halfway through cooking time. Let cool for 30 mins. Can keep in zip top bag or other airtight container for one week, or easily freezable.
