Ingredients

2 cups of long grain rice
2 Eggs
1 tsp soy sauce
3 tbsp oil
6 rashers bacon
1 clove of crushed garlic
6 spring onions sliced
1 tbsp soy sauce
Directions
1. Cook the rice
2. Spread rice out on trays and leave to dry
3. Lightly beat eggs and 1st measure of soy sauce.
4. Heat 1 tbsp of oil in wok/ pan. Pour in 1/2 the egg mixture and cook until golden on both sides. Slice into 1cm strips. Set aside. Repeat with the other 1/2 of egg mixture. Set aside.
5. Heat another tsbp of oil and cook bacon until crisp. Set Aside.
6. Cook Garlic and onions (may add ginger if you wish) over a low heat. Add in the remaining oil.
7. Add rice and stir-fry for 5 mins. Return strips of egg and bacon to wok.
8. Stir-fry to heat through
9. Add 2nd miture of sauce sauce stir to mix in.
Opptional: Add mix veges for extra flavour
