Ingredients

    4 cups low sodium chicken broth
    2 cups water
    1 whole chicken breast (boneless and skinless)
    1 medium onion chopped
    1 small can chopped green chilis
    1 can Rotel tomatoes and green chilis diced
    1 teaspoon ground cumin
    1 clove garlic chopped
    2 tablespoon chopped cilantro leaves
    1/2 cup brown rice
    3 corn torillas cut in wedges

    Toppings:
    1 cup 2% grated cheese
    Fat free sour cream
    Sliced green onions
    Sliced Avacado
    Lime juice
    Toasted tortilla strips

Directions

Place all ingredients in a slow cooker or pressure cooker and cook until chicken is tender and will shread.

Brush remaining 3 corn tortillas with oil and slice into 1/4" strips. Separate strips and place on cookie sheet. Bake in 400 oven until brown.

Serve with a sliceof lime, toasted tortilla strips, sliced green onions, a dolop of sour cream, slices of fresh avacado.
