Ingredients

2 cup quick oats
2 cups vannilla soy milk
1 1/2 cups whole wheAT flour
1/4 cup flaxseed meal
1/4 cup wheat bran or oat bran
1/2 cup splenada brown sugar blend
1/4 cup splenda
1 1/2 cup unsweetened applesause
2 lg eggs
2 tsp baking powder
1 tsp baking soda
1 tsp salt
3 tsp cinnamon
1tsp nutmeg
1/2 cup each of dried cranberries and walnut , opptional
Directions
heat oven to 400 degrees,
soak the oats in the soy milk for about 1 hour
add all dry ingrediants together and blend,
add eggs and applesauce with oat mixture,
stir all dry ingrediants into the wet , be careful to not over work the batter, use an ice cream scoop to drop into muffin tin,,, this will make 12 large or 24 small muffins,,, bake for 18-20 minutes,
these are wonderful warm from the oven or store for up to a week covered in the fridge
