Introduction

A recipe from Japan that's great for adults and babies. I wrote bread since that's the direct translation, but it's more like an extremely moist and fluffy cupcake. The recipe is very flexible so you can try it with pumpkin or brown sugar and it will turn out just as good. A recipe from Japan that's great for adults and babies. Ingredients

    Pancake mix (don't use the "just add water" type) - 200g
    Milk 2% - 100ml
    Egg - 1
    Carrots, shredded - 100g
    Canola Oil - 1 tsp

Directions

1. Grate the carrots. I use a cheese grater since that's the only thing I have.
2. Mix all the ingredients together. The carrot makes the bread naturally sweet, but when I have a craving for sugar, I add 2 tablespoon of honey.
3. Start boiling the water in the steamer. My rice cooker has a steamer rack so I tend to use that.
3. Pour the batter into an aluminum cupcake liner or if you have individual cupcake baking cups that would be better. You can pretty much use anything as long as it can be steamed and it fits in the steamer.
4. Put the cupcakes on the rack and close the lid. Steam if for 10 to 15 minutes. This recipe makes 6 cupcakes.

A lot of times I'm out of cupcake liners so I just make a square shaped cup out of aluminum foil. It works the same as long as there are no leaks.
For people who do not own a steaming rack, you can try using the microwave. Put the batter in mugs or any small microwavable dishes(no aluminum). This take a little bit of experimentation depending on the microwave. I set mine at 600w and microwave it for about 1 min 30 sec.
